Orange Chocolate Cream Dessert
Ingredients
100g (4oz) butter
225g (8oz )digestive biscuits, crushed
150g (6oz )sugar
grated rind and juice of 1 orange
100g (4oz) plain chocolate
1 egg
25g (1oz) cornflour
150ml (5fl oz) fresh single cream
150ml (1/4) pint of milk
orange flavoured liqueur (can use cointreau)
150ml (5 fl oz )fresh double cream
Method
1. melt butter in a pan add crushed biscuits and 50g (2oz) sugar
2. place the chocolate in a basin standing over a pan of hot water. heat gently until melted, stirring occassionally
3. make up the orange juice to 75ml (2 1/2 fl oz) stir the rind and juice into the chocolate with 50g (2 oz) of the sugar
4. beat the egg then fold into the chocolate. remove from heat
5. place the cornflour, fresh single cream, milk and remaining sugar in a saucepan. whisk over a gentle heat until the sauce boils and thickens. simmer gently for 2 mins
6. add the sauce to the chocolate mixture and then whisk with a rotary or electric whisk until the mixture is completely smooth and blended. add the cointrreau
7. layer the biscuit mixture and chocolate mixture, finishing with chocolate layer. whip double crea, until stiff. decorate the dessert with cream and orange slices
