RASPBERRY CRÈME BRÛLÉE
Ingredients
Serves 6 to 8 people.
1 packet (450g) Frozen Raspberries (From Super U. Availability seasonal – could use mixed red fruits.)
2 cartons (50 cls each) Crème Fraîche Épaisse (NOT low fat)
150g Amaretto biscuits (Only found at Leader Price. These have strong taste of almond. If preferred, use different macaroon biscuits.)
Optional:- Fresh peaches, peeled and cut up.
Demarera sugar (Cassonade)
Method
Use a flat oven-proof dish about 20×25 x 5cm high. Defrost the raspberries and put into a sieve to allow the juice to run out. Discard the juice. Cover the base with the raspberries and peaches. Cover with the crème fraîche and put it in the fridge for half an hour. Crumble the macaroons (Amaretti) on the top, making sure all the crème is covered. Sprinkle all over with brown sugar and quickly grill the top until the sugar is caramelised. (Do be careful not to burn it !) Remove quickly from the grill and cool in the fridge before serving. Individual glass dishes look good but make sure they will not shatter under the grill !!
